My Favorite Meatloaf

Okay, I know there are lots of meatloaf haters and skeptics out there but I think I stumbled across a meatloaf recipe to reconsider your hesitations. I think why meatloaf gets a bad rap is because people are hesitant to be creative with meatloaf. So please have an open mind with this recipe. The meatloaf is flavorful and moist thanks to the bacon covering it. You're thinking I've never heard of bacon and meatloaf being associated together but they perfectly compliment each other in this dish. Another detail you might notice is it's not baked in a loaf pan and that's okay. Please give meatloaf another chance. I think you'll be surprised how tasty it can be.

Grilled Chicken & Pineapple Quesadillas

This flavor combination might seem a little strange, but these Quesadillas were amazing! After Jeff's second bite, he told me I should blog about them. I also fell in love with them from my first bite. It was the perfect balance of sweet and spicy for both of us. I will admit that they did take a little bit of time to prepare, mostly because I didn't have leftover grilled chicken breast in the fridge but are totally worth the extra time. My mouth waters as I'm thinking about these now. Please try!

Pan-Fried Pork Chops

I don't know about you, but sometimes I forget about pork. It seems that most of my recipes revolve around chicken, beef, and seafood. Then every so often, I remember pork, the other white meat. This recipe is super simple and fast to prepare. Jeff's first comment when he tried his pork chop was it's so good, it doesn't even need BBQ sauce. That my friend is a perfectly seasoned and cooked pork chop. I thought they were so good, I had two. I hope you give this recipe a try in the near future.

Gnocchi with White Beans

A few weeks ago I saw this recipe and it looked like something I wanted to try.  I actually wanted to make this earlier this week but our SuperCenter Wal-Mart didn't carry gnocchi though I find it later at our Target store interesting enough.  Potato gnocchi is hightlighted in this dish and it's been a item that I''ve been looking to utilize when cooking.   I found this dish easy and quick to prepare making it a great option for a weeknight dinner.  I made a few minor changes based upon reviews and I thought it tasted great.  Next time I plan on adding some cooked Italian sausage for tasty twist.  So if you are in the mood for Italian flavors, please try this recipe.

Ingredients

  • 1 medium onion, chopped
  • 2-3 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 package (16 ounces) potato gnocchi (find near the pasta or frozen foods section)
  • 1 package (6 ounces) fresh baby spinach
  • 1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
  • 1 can (14-1/2 ounces) Italian diced tomatoes, undrained
  • 1/4 teaspoon pepper
  • 1/2 cup shredded part-skim mozzarella cheese
  • 3 tablespoons grated Parmesan cheese
  • Variation:  Add 2-3 fully cooked Italian sausage.  Slice sausage before adding to mixture.

Directions

  • In a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add gnocchi; cook and stir for 5-6 minutes or until golden brown. If the gnochi begin to stick, add more olive oil and make sure to stir frequentley.  Stir in spinach; cook until spinach is wilted.
  • Add the beans, tomatoes, sliced sausage(if you like) and pepper; heat through. Sprinkle with cheeses; cover and remove from the heat. Let stand for 3-4 minutes or until cheese is melted.
